Reinventing 'Apple Crumbled'


I have been cooking this recipe ever since my wonderfully kitchen-talented friend Mary Kay introduced me to it 'Apple Crumbled'. My version is a little bit different though. I am substituting butter with olive oil, white sugar with 100% organic maple syrup and adding some nuts for crunch. I had tried the butter substitution before, maple syrup is new for me too. So what's in the oven right now has something like this:

1 large green apple
5-6 small sweet red apples
both kinds peeled, cut in bite size pieces

juice of 1 lemon, poured over the apples

4 table-spoons of maple syrup, poured directly over apples after lemon and mixed

on a separate bowl mix the following, when all flour and ingredients are wet from oil and syrup, pour over the apples (the mixture should taste a slightly sweet not too much, you should also taste the pinch of salt which makes everything come alive!)
1.5 cups of whole wheat flour
2 table spoons of olive oil
4 table spoons of maple syrup (it's really not that much, trust me!)
1 cup of slivered almonds
2 cups of oats
pinch of cinnamon
pinch of salt

place the mixture in 350 degree oven (Fahrenheit :).
Cook until apples are soft and crumble on top is fragrant and slightly golden.

Enjoy warm or cold (works great with vanilla ice cream!)
