Orange Craisin Cake

This cake is inspired by a scone I ADORE at Sticky Fingers Vegan Bakery :) I also have to thank my mom for teaching me how to bake cakes and giving me the secret cake consistency so that I can add and subtract things and create my own stuff. The secret is something like this (obviously much easier to explain in person or with a video, oh well too bad for you that I'm too lazy for that :): When you add all of your wet and dry ingredients, fill your mixer thingies or a spoon with the mixture and let it drop back into your bowl. Consistency needs to be such that the cake mix will fold onto itself like an accordion. It shouldn't be too sticky (which means add dry ingredients, namely more flour) and it shouldn't be too thick (add some milk :).

So now that you know the 'secret', let's get on with the recipe, shall we? :)

Pre-heat your oven to 350 Fahrenheit.

In a large bowl mix 1.5 cups of brown sugar (I prefer crystalized natural cane sugar) and 3 eggs. The more you beat this one, the better. Also if you don't already have one, get yourself one of these electric mixer babies, it makes life a LOT easier for a baker :)

Add 1 cup olive oil (yes you heard it right :), zest&juice of 1 orange, 1 cup vanilla soy-milk, 1 tablespoon baking powder and a pinch of salt: you guessed it, mix again! :)

Now the dry ingredients. Add 2 cups of whole-wheat flour, mix. Then add 2 cups of white flour and mix again. Make sure that you mix really well and there are no lumps. You can test my mom's baking secret at this point, lift up the blender to see how the mixture will fold down. Add 1 cup of oats and mix. This is the last ingredient you'll use your electric mixer for. So when done, lift the mixer pieces (make sure to swipe the cakey goodness down :) and put it aside.

Lastly, add in 1.5 cups of craisin and fold this one in with a spoon or a spatula (I prefer a spatula). Spray your cake pan (I like the round ones like this one :) and pour in your cake. Cake goes into 350 heated oven for about 50-60 minutes. To test if it's done, get a toothpick, pinch the cake in a couple places, if the toothpick comes back with remnants of wet dough, get that cake back into the oven!

When done, let the cake rest about 15-20 minutes, before turning it upside down and loving it while thanking me for my genius baking skills :))
