Savory Pastry with Leeks and Onion (Pirasa Boregi)

This is one of my favorite Turkish recipes, borek simply means a savory pastry and it's much easier than you think. Here's what you need:

For the filling:
1 onion
3 large leeks, washed and cut into small pieces
2 tablespoons of olive oil
salt, black pepper
Cook all of the above in low heat until tender and set aside.

For the moisture:
2 cups of milk
1 egg
1 tablespoon of olive oil
salt, black pepper
whisk together and set aside

For the pastry:
All of the above and,
1 package of phyllo dough (you can purchase it from the frozen dessert section of your supermarket)
1 large oven tray

Heat your oven to 350 F. Lay your assembly line in front of you. Take out your phyllo dough out of the package (they usually come in pairs of two, just open one so the other one doesn't dry out and crumble!). Pick 3 pieces and lay them out on your tray, pick another 3 pieces and cover the tray entirely (as seen in the picture). Then add 2-3 tablespoons of the milk mixture on top, making sure all the pastry is covered. This will prevent it from drying out and the pastry will come out yummily moist and delicious.

Next add 2-3 spoonful of your filling (see picture). You don't need to add much since it will get gradually more with the layers. Keep layering until you run out of sheets, making sure to have only phyllo dough at the very top (usually takes 5-6 layers if you wanted to ration your filling).

Last, pour the remaining milk mixture covering the entire pastry. Place it in the already hot oven, cook for 50-60 minutes. You can serve it hot or cold.
