Pretty in Pink Beet Salad

Love the colors of this salad. Here's how to make it:

First you need to pickle your beets, you'll need:

1 medium size jar
4 peeled beets sliced as you please
About 1.5 cups of organic apple vinegar
3 cloves of garlic
1 teaspoon of salt

Place the sliced, salted beets in the jar. Slice or mince your garlic (if you want to take it out later slice them big) and add it in. Fill the jar halfway with the apple vinegar, halfway with water. Keep refrigerated for 2-3 days before using.

For the salad you'll need
3-4 slices of your pickled beets, add them whole or slice them smaller
3-4 tablespoons of the delicious pickle-water from the jar (this is what will give the color)
Half an iceberg lettuce (or any other kind you have or would like)
a few drops of lemon to freshen the salad
Some freshly ground black pepper
And of course extra virgin olive oil :)

This is a great summer salad to enjoy on its own or as a side dish.
