Italian Morning Toasts

Here's a recipe from this morning. You can use those farm tomatoes that you picked up :)

This is a recipe that I learned way back when from an Italian friend. It turns out Tevfik also learned it from his grandmother who lived in Florence and Napoli for  a number of years. So without further history or research on its origins, this is enough proof for me to credit the magnificent Italian cuisine for this awesome recipe :) Here's what you need:

Sliced bread, of course the better your bread is the better your toasts will turn out. We used sourdough slices.
Sliced Tomatoes
Sliced Mozzarella
Extra Virgin Olive Oil (EVOO)
Dried Oregano and a little salt

Heat your oven to 350 Fahrenheit. Place bread slices in your tray and brush them with EVOO. Place the tomato slices evenly on the bread, spread some salt on them otherwise they'll taste blend. Mozzarella goes on top. Lastly a bit of oregano for the scent and lovely sight. Bake 15-20 minutes in the oven until mozzarella melts completely. Eat warm but careful, those tomatoes will be hot, you may want to keep them out of the oven for 5-10 minutes before serving/eating.
