Ispanakli Pogca - Turkish Pastry with Spinach - Yum! :)

Ispanakli Pogca is an awesome thing. Here's how to make it:

For the filling:
1 onion
1 package of frozen spinach or about 2 pounds of fresh one
salt, black pepper, red pepper
2 tablespoons of extra virgin olive oil

Cook the onion down, add the spinach, when it wilts down your filling's ready.
You can also use other fillings like feta cheese and cilantro (no cooking needed), potatoes instead of spinach, etc. Go with your gut and what's in the fridge :)

For the dough:
1 glass of yogurt (choose one that isn't filtered, so don't use greek yogurt)
1 glass of olive oil or canola oil
1 table spoon of baking powder
4 eggs, separate the yolks of 2 of them aside, you'll use this to glaze the tops of your pogcas
sesame seeds to decorate
pinch of salt
white flour, as much as needed (about 3-4 glasses)

First mix the wet ingredients, gradually add flour mixing with your hands. Stop adding when you reach to a pizza dough like consistency. Let it rest in a covered container for about 20-30 minutes

The assembly:
Pre-heat your oven to 400 Fahrenheit.

Take small (about lemon-size) pieces of out your dough, place it on a dry wooden board and flatten it into a circle with your hands. Add a spoon of your filling into the middle. Fold the circle in half, sealing the edges with your hands (Check out the pictures below for guidance). Once ready, place the pogcas onto a lined or oiled tray. When the assembly is complete, cover them with a thin layer of egg yolk and pour some sesame seeds on top for decoration.

Into the 400 F oven for 30-40 minutes or until golden at the top.
