Coconut Orange Chocolate Cookie

I blame my mother and my aunts for my ability to spontaneously create a cookie recipe from scratch, using whatever I have around. Really it's all their fault. Here's what happened today:

2 eggs
1/2 cup heavy cream
Zest of 1 orange
1 cup of coconut pieces
2 cups of chocolate chips (I may have overdone that a little bit!)
2 cups of brown sugar
1 pinch of salt
8 tablespoons of butter and coconut butter (you can use either, I mixed since I ran out of coconut butter)
a mixture of white and wheat flour, 4-5 cups until it becomes like a cookie mixture
1 tablespoon of baking powder
1 cup of oats

Mix all and roll into small cookie pieces on your sheet.
40-50 minutes or until golden brownish in 350 oven.
Caution: this will make A LOT of batter. If you don't want to bake all of it, separate some and freeze for later.

Enjoy!

It runs in the family. Same applies to omelettes, fruit salads and midnight cocktails. I should guest post some :)
