Lemon Cake

Yum yum yum and super easy :)

Wet ingredients
juice and zest of 3 sweet Meyer lemons
2 tablespoons of vanilla
3 egg whites
3/4 cups of melted & cooled coconut oil (5 tablespoons unmelted)

Dry ingredients
1.5 cups of white sugar
2.5 cups of white flour
1 tablespoon of baking powder

  • Pre-heat oven to 350 Fahrenheit. 
  • Prepare your baking pan, lining it with coconut oil and sprinkled flour.
  • Mix the wet ingredients, mix the dry separately, then mix them all. 
  • Cook for about an hour.
