1 bag of spinach (I used Trader Joe's 170g one)
1 red pepper
2 table spoons of olive oil
Salt and turmeric
Sauté onion, red pepper in olive oil first at high then in low heat. Add salt and turmeric. When cooked, add the spinach. Keep the lid closed in low heat for 2-3 minutes and you have a yummy dish!
If you want to make it even better add 2 cans of white beans or my favorite, chickpeas (add them with onions and pepper).
