Quinoa Tabouleh

1 cup of quinoa, cooked and cooled
2 cups of cilantro leaves (1 bunch)
2 table spoons of fresh mint, torn to small pieces by hand
1 cup of lemon juice (about 5 lemons)
2/3 cups of extra virgin olive oil
1 large cucumber, chopped to small pieces
1 large green pepper, chopped to small pieces
2 tablespoons of chives, cut to small pieces. 
1/2 tablespoon of salt

Mix it all in a big bowl right before your party and enjoy. Keeps in the refrigerator but it's best when fresh. If you like you can also add some ground garlic to the mix.
