Orange Chocolate Chip Cake
Gluten and dairy free, super moist and tasty.
The pulp of 1 cup of soaked almonds (see almond milk recipe) or 1 cup of almond meal/flour mixed with 3 tablespoons of water
3 tablespoons of cacao powder
1 teaspoon of vanilla powder or extract
1 cup of coconut sugar
1 tablespoon of baking powder
1/4 cup of sweet sorghum flour or coconut flour
The juice and zest of 1 orange (about 1/3 cup)
4 tablespoons of melted and cooled coconut butter
1/2 cups of gluten free chocolate chips (add last)
Olive oil and 1/2 tablespoon of sorghum flour to spread to the bottom of the cake pan to prevent the cake from sticking
Mix all ingredients (start with the wet, add the dry, chocolate chips are last).
Prepare your pan with olive oil and sorghum flour. Bake in preheated 350F oven for 45-50 minutes
