Pickled Beets

8 large beets
2.5 cups of water
1.5 cups of apple cider vinegar
4 large garlic cloves (peeled and pressed)
2 teaspoons of salt

Peel and cook the beets slowly with the water (in medium to low heat), make sure to turn them often if the tops are out of the water. Once done cut the beets in half, then slice them as half moons. Put the beets, the cooking water and all the rest of the ingredients in a big jar and store in your fridge overnight.

This is an amazing side dish, you won't believe how good it tastes! And don't forget to drink the juice, sooo yummy.
