Chestnut Chocolate Pudding
2 cups of cooked chestnuts (2 packets from Trader Joes)
1 can of coconut cream
1 cup of dairy and gluten free chocolate chips (I used Enjoy Life brand)
1/2 cup of maple syrup
Thinly shredded coconut as garnish on top (after it is cooked)
Crumble the chestnuts as much as you can. Put everything in a pot and boil. Mix it up with a hand blender and pour into individual glasses or small bowls. This is a very rich dessert so think small! Garnish with shredded coconut. Refrigerate and serve cold.
