Stuffed Peppers

4 large green peppers
2 cups of cooked quinoa
1 onion
2 table spoons of red pepper paste
2 table spoons of tomato paste
5 table spoons of extra virgin olive oil
Salt, black pepper, dried mint
2 cups of water
1 tomato

Cook the onions with olive oil, red pepper paste and tomato paste. Add the quinoa and the seasonings. Cut out the tops of the green peppers and empty all the seeds. Fill them with the quinoa mixture, place them in a pot, add the water and cook in medium-low heat until the green peppers are cooked.
