Veggie Soup




2 cups of butternut squash (or any other root vegetables you have, celery root, parsnips, beets, potatoes, etc. you could also put them in frozen)
1 onion
1 cup of fresh or frozen cilantro (parsley would also work)
Cumin, red pepper, black pepper, garlic powder, salt
Extra virgin olive oil
5 cups of water

Sauté the onions. Add the spices and stir for a minute. Add veggies and water. Cook in medium heat until veggies are cooked and soft. Add the cilantro and use a hand blender to smooth it all.
