Chicken Potato Soup
2 large chicken breasts
Chicken broth, 1 liter
Himalayan sea salt
Extra virgin olive oil
5 large potatoes, peeled and cubed
Water, to cover the pot 3/4 of the way
Place all in a pot. Boil/cook until chicken is tender. Break the chicken apart into small pieces with a fork and a knife. You can enjoy it like this or hand blend it all for a smooth texture.
