Amazing Soup

1 onion, chopped roughly in big cubes

4 cloves of garlic

1 cup of baby carrots 

1.5 cups of red lentils

1 cup of raw cashews

200 g tomato paste (1 small glass jar)

2 cups of chicken stock (or just add water)

2 cups of water

1 tablespoon of 10 spice mix by Oh She Glows cookbook and blog

1/2 teaspoon of black pepper 

1/2 teaspoon of red pepper 

1 tablespoon of dried mint (add once the soup is cooked and blended)

3 tablespoons of extra virgin olive oil

1.5 teaspoons of himalayan salt


Add everything except the mint to a pot. Cook in medium/high heat for 20-30 minutes (or until all veggies are cooked). Blend all with a hand blender. Add the mint.
