Updated Mashed Potatoes

Mashed potatoes with a little twist (of lemon):

The juice of one lemon
7-8 potatoes, cut, cooked in water, drained
half a cup of organic sour cream (to make it vegan, skip this one)
3 tablespoons of extra virgin olive oil
chives, cut in small pieces
salt, black pepper, crashed red pepper

Mash the potatoes with sour cream, olive oil and your spices. Let it cool down a little. Then add the lemon juice and chives. Mix up and serve cold. Really a crowd pleaser. Enjoy!
