Fish in Paper
Serves four people and is excellent for dinner parties:
2.5 lb of Salmon, Swordfish or any other fish that you like, without the skin
1 large leek, washed and cut to small pieces
5-6 baby bella mushrooms, washed and cut
5-6 white mushrooms washed and cut
6-7 cloves of garlic, meshed
salt, black pepper, extra virgin olive oil
4 pieces of parchment paper cut approximately 8 by 9 inches.
Prepare your assembly line, with all the ingredients and your oven tray. Start by placing your leeks and mushrooms at the bottom of your, season them. Then place the fish and season it. Lastly add a little bit of garlic and a drizzle of extra virgin olive oil (looks like first picture above!). Fold the long edges of the paper in, squeeze in the bottom short edges. Place in your tray. Cook in 350 Fahrenheit oven for 60 minutes.
With the steam of the veggies your fish will cook to perfection. Your guests will love the presentation and will enjoy the taste.
