Turkish Tabouleh (Kisir) - Secret Recipe
This is my mom's secret recipe. It is the best tabouleh ever. Try it and love it. Here's what you need:
For the cooked portion:
2 cups of very thin bulgur
1 small can of tomato paste
(if you have it) 1 tablespoon of red pepper paste, this adds an amazing flavor
1 small onion
3-4 cloves of garlic
4 cups of boiled water
1 small green pepper
salt, red pepper, black pepper, sumak (a lemony Turkish spice)
2 tablespoons of extra virgin olive oil
Cut and cook the veggies in olive oil. Add everything else, add bulgur last, cover with water and turn the stove down letting it swell. Fork the bulgur after a few minutes, bulgur will fluff up to double its size. It cooks really quickly, super simple to make.
For the uncooked portion:
The juice of 1 lemon
2 table spoons of extra virgin olive oil
1 tomato
1 green pepper
4-5 scallions
1 bunch of parsley (or use cilantro if you prefer), leaves cut to large pieces, about 2 cups after prepping
Let the bulgur cool down, then add the uncooked ingredients. Enjoy with a side salad of simple greens. This is the best tabouleh ever, trust me :)
