Veggie Pasta Casserole
Easy breezy holiday side dish or everyday main dish. Here's what you need:
1 package of whole wheat pasta
2 cups of sour cream (I used organic nonfat)
1 onion
3-4 cloves of garlic
1 cup of whole kernel corn
2 cups of cut mushrooms
Salt, black pepper, red pepper
Extra virgin olive oil
1 cup of shredded mozarella
1/2 cup of bread crumbs
Cook your pasta to al dente. In a separate pan sauté your onion, mushrooms, garlic and corn. Green peas would fit well too, I didn't put any since husby doesn't like them. When they are cooked add sour cream and spices. Mix pasta and sauce in a pyrex, add some olive oil or butter if you like. Pour cheese, then the bread crumbs on top. 10 minutes in 400 Fahrenheit oven and enjoy!
