Vegan Potato Salad



6 potatoes, peeled, cut in cubes, steamed
1 cup of raw cashews, soaked overnight and drained
4 cloves of garlic
extra virgin olive oil
juice of 1 lemon
1/2 cup of water
salt to taste
1 cup of green onions, cut in small pieces
1 cup of celery (4-5 stalks), cut in small pieces

Pulse the cashews, oil, lemon and water in a high speed blender and make the sauce. Combine everything and the sauce.
