Bean Salad With Tahini
2 cans of organic northern beans (white beans)
6 individual stalks of celery
1 large carrot (or 2-3 regular size)
The juice of 1 lemon
4 cloves of garlic
4 tablespoons of olive oil
1/2 cups of organic tahini
pinch of salt
Slice the carrots and celery really thinly. I used my kitchen blender's smallest setting for it. Drain the beans and add them in. In a separate blender, place tahini, lemon juice, garlic and salt and blend until smooth. Mix it all and enjoy!
It's so yummy, you'll want seconds :)
