Red Lentil Kofte (Mercimek Koftesi)


1 cup of red lentils, cooked in 2 cups of cold water until soft but not soggy, add more boiled water as needed.
1.5 cups of quinoa, cooked in 2.5 cups of boiled water
1 onion
4 cloves of garlic
1 tablespoon of tomato paste
2 tablespoons of red pepper paste
1/2 cups of parsley or cilantro
4 green onions
3 tablespoons of extra virgin olive oil
Very little salt since the red pepper paste is usually very salty
Cumin
Black pepper
Red pepper (optional)


Mix the cooked lentil and quinoa. In a separate pot, cook the onions with olive oil, pepper, and tomato paste. Once done, add the garlic, parsley, and green onions. Mix everything together. Wait until the mixture is cooled down. Squeeze a small amount in your fist to make a kofte ball. Ball them all and refrigerate.
