Falafel


 1 cup of chickpeas, soaked in water for 24 hours (will make about 2 cups soaked)

1 small onion

4 cloves of garlic

1 tablespoon of lemon juice

1 teaspoon of baking soda

1 cup of parsley or cilantro

lots of cumin

salt

black pepper

little bit of red cayenne pepper

2 tablespoons of extra virgin olive oil

Avocado oil to cook them


Place the chickpeas in the food processor. Add the baking soda, squeeze the lemon on the soda to activate it. Add it all. Pulse everything on high in a food processor.

Form into small round shapes (like a cookie) using a ladle or a large spoon

Cover the bottom of a pan with olive oil. Fry them with the lid closed and turn over when one side is done.

Goes wonderful with a green salad
