Celery Roots With Peas And Orange



4 large celery roots (celeriac) (peeled and cubed in large chunks)
1 onion chopped
4 carrots cubed in small pieces
3 potatoes cubed in large chunks
2 cups of frozen peas
1/2 cup fresh dill
Zest and juice of 1 orange
1.5 cups of water
Olive oil
Salt

Sauté the onions and carrots in olive oil, add your salt here. Add celery root, potatoes, water and peas. Let it cook in low heat for 30-40 minutes until all veggies are soft and cooked. Add the orange juice, zest and dill right before serving.
