Mung Bean Salad




1.5 cups of mung beans, soaked overnight 
1 green pepper, chopped
1 cup of fresh dill
1.5 cups of cornichon pickles, cut in small pieces 
1 cup of green onions, cut in small pieces 
4 cloves of garlic, pressed
The juice of 1.5 lemons
4 tablespoons of extra virgin olive oil
Salt to taste

Cook in the mung beans in a water filled pot. Drain and cool them. Mix all the ingredients including the mung beans.
