Arugula Pomegranate Salad




2 jars of Mediterranean Hummus (Trader Joes)
1 packet of arugula
1 pomegranate (seeds separated)
1.5 cups of raw walnuts
The juice of 2 lemons
1/2 cups of extra virgin olive oil 
Salt

Lightly roast the walnuts and let them cool. 
Spread the hummus on a large bowl
In a seperate bowl mix the arugula with lemon juice, olive oil and salt. Then pour over the hummus (leave the juice out). Top with pomegranate seeds and walnuts.
