Warm Lentil Stew (Kitchari)



2 cups of lentils
1 cauliflower, chopped
1 cup of carrots, chopped
1 cup of cilantro, chopped
1 tablespoon of minced ginger
Salt
Cumin
Mild curry powder
Black and red pepper (optional)
2 tablespoons of olive oil
Boiling water, a little more than convering the tops of veggies

Sauté the vegetables shortly in olive oil. Add the rest of the ingredients and cook until everything is soft. Eat as a stew or over rice. 

You can also add 1 cup of rice at the beginning. If you do, make sure to add 2 more cups of water. 

This is a really soothing and warming recipe, inspired by the Ayurvedic dish Kitchari.
