Dried Eggplant Dolma

Take the strings out of the eggplants. Boil a pot of water. Place the eggplants in it gently stirring for 3 minutes. Place them immediately in ice water for 2 minutes to preserve color and shape. Fill and cook the same way as the green pepper dolma. The only difference is you can place them sideways for cooking.
You can eat them hot or cold. Goes great with garlic yogurt.
