Vegan Cacik (Tatziki)




1.5 cups of raw cashews soaked overnight and drained. 
1 zucchini, cut in big chunks
6 cloves of garlic
2 cups of water
The juice of 1 lemon 
Salt (liberal amount!)
2 tablespoons of extra virgin olive oil 
1 cucumber, grated
Mint (dried or little pieces of fresh)

Place everything except the cucumber and mint in a high speed blender. Take the mixture into a serving bowl. Add the cucumber and mint.  Refrigerate and enjoy!
