Veggie Soup
1 onion
1 cup of fresh or frozen cilantro (parsley would also work)
Cumin, red pepper, black pepper, garlic powder, salt
Extra virgin olive oil
5 cups of water
Sauté the onions. Add the spices and stir for a minute. Add veggies and water. Cook in medium heat until veggies are cooked and soft. Add the cilantro and use a hand blender to smooth it all.
