Creamy Cashew Veggies




Half an onion
2 cups of broccoli 
1 zucchini 
2 cans of cooked chickpeas
(And any other or alternate veggies you have or want)
Salt, black pepper, red pepper 
1 can of diced tomatoes 
1 small can of tomato paste
1 cup of water
1 tablespoon of extra virgin olive oil

Place all of the above in a pot and bring to a boil, stirring occasionally. Let it simmer on low heat while you prepare the cashew cream. 

1 cup cashews
5 cloves of garlic
2 cups of boiling water

Blend these three in a high speed blender and add to the already cooked veggies. Mix well, adjust spices as needed. Turn off the heat and let it all sit for a little.
