Nourishing Vegetable Soup



1 onion, chopped 
1 celery, chopped 
1.5 cups of chopped carrots
1.5 cups of mushrooms chopped
1.5 cups of lentils
5 cloves of garlic, pressed
1 package of Mushroom broth (optional, add more water if you don’t have it)
4 cups of water 
Extra virgin olive oil
Cilantro
Salt, black pepper, red pepper 

Sauté all the veggies in a little oil. Add the lentils, broth and water. Add the garlic, salt and the spices. 
Bring to a boil in medium heat. Add a little more extra virgin olive oil for taste. Serve and garnish with a liberal amount of cilantro.
