Fried Quinoa (fried rice style)
2 tablespoons of avocado oil
1 onion
1 red pepper, cut in small
2 green peppers, same
1/4 cup tamari sauce
2 tablespoons toasted sesame oil
4 cloves of garlic
1 cup of scallions
Shrimp cooked with tamari and sriracha (optional)
Sauté the onion and red pepper in avocado oil on hugh heat.Add the quinoa, tamari sauce, sesame oil, garlic, scallions and shrimp (if you have any). Mix them all well. Turn off the heat and let it sit.
