Traditional Turkish Red Lentil Soup

2 cups of red lentils 

8 cups of chicken stock (or water)

1 large onion, roughly chopped

5 cloves of garlic

3 tablespoons of tomato paste

2 tablespoons of dried mint

2 tablespoons of extra virgin olive oil

3 teaspoons of salt


Boil everything until the veggies and lentils are cooked. Mix with a hand blender. 

Serve with 1 tablespoon of fresh lemon juice on the bowl.
