Zucchini with Olive Oil




6 zucchinis, peeled and chopped in cubes
1 onion, chopped
4 tomatoes, peeled and chopped 
6 cloves of garlic, minced
4 tablespoons extra virgin olive oil
Salt
Black pepper 
Mint

Sauté the onions in olive oil. Add everything else and cook in medium to low heat. Eat warm with rice or serve cold as a yummy side dish.
