Eggcado Bowl




4 eggs, boiled to well done and cooled
1 tomato, sliced
1 cup of lettuce or spinach 
1 avocado, sliced
1 green onion, chopped finely 
2 tablespoons of mayonnaise 
Himalayan salt
Sriracha or any hot sauce you like

Prep two bowls with half of your tomato, lettuce and avocado slices. Sprinkle them with some himalayan salt. 

Separate the yolks of the eggs and mix them with the mayonnaise, little bit of salt, and green onions. Coarsely dice the white parts. Add it to the yellow mixture. Lay it on top of your veggie bowl. Garnish with sriracha. So yummy!
