Wholesome Pot of Veggies
Here's what you need for pure wholesomeness :)
5-6 medium potatoes (choose organic for better taste!)
1 large red onion
5-6 large carrots (or a cup of cut small carrots)
5-6 leaves of kale (separate from the core and cut in large pieces)
1 can of diced tomatoes (or use fresh)
7-8 leaves of mint
salt, black pepper, red pepper
2 tablespoons of olive oil
1 cup of water
1 cup of snow peas
2 cups of green peas
Onion, cut potatoes, carrots, tomatoes, olive oil and 1 cup of water go into the Dutch Oven (or any other pot you like) to cook thoroughly in low heat. Once the potatoes and carrots are soft, shut down the stove, add the kale, peas, snow peas, your spices, close the lid and let it sit. The heat from the potatoes will be enough to get them steamed lightly not losing their green. Lastly tear the mint into a few pieces in your hand and add it in as the final punch.
