Chocolate Ganache Orange Zest Cupcakes

These cupcakes are sooo moist and tasty that it would be a crime not to share :) They are super easy to make.

This batch makes 20-22 cupcakes

For the cake:
4 eggs
1.5 cups of sugar
2 tablespoons of yogurt
0.5 cups of coconut oil (melted and cooled)
2 cups of flour
1 cup of cooked pureed carrots (or 1 jar of carrot baby food)
1 tablespoon of baking powder
1 teaspoon of vanilla
zest of 1 orange
1 cup of chocolate chips (optional, if you need more chocolate in your cupcakes)
Paper cupcake holders and a cupcake tray

Mix the wet ingredients (mix cacao powder in melted coconut butter) then the dry (if you prefer with an electric mixer), adding chocolate chips as the last with a spatula. Pour into cupcake holders with an ice cream scoop. 1 to 1.5 scoops is enough for each cupcake (depending on your holder size). Pre-heat your oven to 350 Fahrenheit. 18 minutes of baking, no more no less. When they are done, keep them in a covered container so that they don't lose their yummy moisture. I remove the paper holders once they are cool, for easy frosting.

For the chocolate ganache topping:
1 package of chocolate chips (or use any bitter sweet or dark chocolate that you like.
1 cup of heavy cream

Mix both ingredients in a pan at low heat. When done either dump your cupcakes head down to the sauce or put it in a ziplock and let it sit in the fridge for a bit, then add onto the cakes by cutting the edge of the ziplock bag. Decorate with any other topping you like :)

Kek icin:
4 yumurta (
oda sicakligina isitilmis)
1.5 bardak seker
2 yemek kasigi yogurt (oda sicakligina isitilmis)
0.5 bardak hindistan cevizi yagi (eritilmis ve sogutulmus) bu yagi bulamazsaniz tereyagi kullanabilirsiniz
2 bardak un
1 bardak pismis ve purelenmis havuc, elma veya balkabagi (bu pure keki nemli hale getirir ve bu sayede fazla yag eklemeye gerek kalmaz)
1 yemek kasigi kabartma tozu
1 cay kasigi vanilya
2 corba kasigi kakao
1 portakal kabugu rendesi
1 bardak damla cikolata (istenirse)
Kagit fincan keki kaliplari ve fincan keki tepsisi

20-22 fincan keki icin tarif. 
Kucuk kagit kaliplar fincan keki tepsisine dizilir. Firin 170 dereceye onceden acilir. 

Islak malzemeler karistirilir. Kakao yagda eritilir. Kuru malzemeler eklenir. Mikserde yavas devirde karistirilir. En son cukulata damlalari eklenip spatula ile karistirilir. Dondurma servis kasigi ile kagit kaliplara dokulur (1-1.5 kasik), firina atilir. Sadece 18 dakika pisirilir ve hemen firindan cikarilir kek ki yumusak ve nemli kalsin. 

Cukulata kremasi:
2 paket bitter cukulata
1 kahve fincani krema veya tam yagli sut

Ufalanmis cukulata ve krema/sut agir ateste karistirilarak eritilir. Fincan kekleri ters cevirilip bu karisima batirilir. Uzeri dilediginizce suslenir. :)
