Vegan Tofu
Vegan, low fodmap, gluten free and totally delicious. Makes an awesome breakfast.
A cup of soft or firm tofu cut in cubes
Olive oil
Sesame oil
Red pepper, black pepper, salt, curry (you can skip the curry for variety)
2 cups of organic baby spinach
Everything in pot except sesame oil. Cover and simmer in low heat until spinach is soft. Add sesame oil for taste.
