Gluten-Free Savory Buns - with olives


3 eggs, yolk of one separated and set aside
1 cup of nonfat Greek yogurt
1/2 cups of extra virgin olive oil
1/2 tablespoon of salt
1 cup of gluten-free flour mix (Trader Joe's)
1/2 cups of gluten-free oat flour
1 teaspoon of baking powder
Pitted kalamata olives (for decoration)

Pre-heat oven to 400F Mix the wet ingredients, add the dry and mix again. Place a baking sheet on an oven tray. Place spoonfuls of the mixture on it like cookies (about 18-20 of them). Brush the egg yolk on top and decorate with a piece of half kalamata olive. Bake for 20 minutes. Makes a great bread alternative.
