Green Lentil Kofte


1 lb green lentils, washed and boiled in water (salt into the boiling water), enough water to cover the surface and go 1/2 inch over, turn down when water is almost gone, and let it rest with the lid on. You want all the water to be absorbed. They won't be completely cooked, they might have a small bite to them like al dente pasta.

In another pan, saute 1 onion in olive oil
add 4 garlic cloves, chopped or squished

1/2 cups of chopped cilantro (parsley would also work)
cumin, black pepper, salt as needed
1/2 cups of oat flour

Mix it all, without squishing the lentils too much. 
Form into kofte shape, cook one side and then the other in a pan lightly covered with olive oil.

Serve with a green salad and enjoy!

You can also serve it the following way: put a kofte on one green lettuce leaf and drizzle with pomegranate molasses (nar eksisi). Yum!
