Potato Pancakes




8-9 potatoes
1 cup of carrots
1 onion
4 eggs
Cumin
Oregano
Salt
Olive oil (for the pan)

Process onion, carrots and potatoes in a food processor. Add salt. Then put them in a nutmilk bag and squeeze the water out. Add eggs. Fry both sides in a pan with a little olive oil.
