Spring Rolls




Bean filling
1 can of great northern beans
1 tablespoon of cumin
1 teaspoon of salt
1 tablespoon of extra virgin olive oil

Mix all, slightly mash the beans and set aside as a filling

The rest of the filling ingredients:
1 cup of red cabbage, cut in strips
3 green onions, cut in small pieces
1 cup of carrots, shredded
Cucumbers, cut in thin strips
1 cup of cilantro
Romaine lettuce, 6 whole leaves

Sauces
Sauce 1
2 tablespoons peanut butter
2 tablespoons of water
The juice of 1 lemon
2 pieces of garlic, minced
1 tablespoon of maple syrup 
1/2 teaspoon salt
Mix all until smooth in a blender 

Sauce 2
3 tablespoons of mayonnaise 
1 tablespoon of Frank’s red hot sauce
Mix all until smooth

Sauce 3
2 tablespoons of chilli garlic sauce
3 tablespoons of apple cider vinegar
2 tablespoons of maple syrup
Mix all

To roll with the fillings
6 large rice paper sheets
A large round container with room temperature water in it

Place your rice paper in water for about a minute. 
Take it out and place it on a flat plate. Layer your desired fillings. Roll them all. (First the side closest to you, then both sides, then roll the rest with some gentle pressure). Dip in your sauces. This makes about 6 large rolls.
