Veggie Soup
1 fennel, chopped in chunks
4 potatoes, peeled and chopped in chunks
1.5 cups of red lentils
2 tablespoons of extra virgin olive oil
Salt
Water
Place all in a large pot, fill it with water up to 3/4 of the pot. Cook in medium heat until all is cooked. Use your hand blender to blend.
