Amazing Fall Soup




1 onion diced
3 tablespoons of extra virgin olive oil 
1.5 cups of red lentils 
1 cup of cooked butternut squash (I bake them in the oven and freeze them in portions to have handy. You could use fresh butternut squash or skip it altogether)
1 can of diced tomatoes 
1 can of tomato sauce 
1 can of tomato paste
4-5 cloves of garlic
5 cups of cold water
Salt
Cumin
1 cup of raw cashews, blended in a high speed blender with 3 cups of hot water to make cashew cream

Sauté the onions in olive oil. 
Add everything else except cashew cream. 
Cook until lentils are soft. 
Blend with your hand blender 
Add cashew cream and mix well. 
Taste and adjust the salt level. 

Optional: garnish with fresh dill or cilantro, and some extra virgin olive oil 

This is the most tasty soup ever!
